I usually don't post recipes here because there are already so many blogs dedicated to that, but as I was preparing this Sunday for my family, I thought how ridiculously easy, why NOT blog about it? I am a very busy lady, and someone else just might appreciate it too!
1 Can of Cream of Chicken
1 Can of Cream of Celery
1 Can of Cream of Mushroom
2 Cans of Veg-All
About 2 - 3 Cups Cooked Chopped Chicken (canned will do)
At least 2- 3 Cups Chicken Broth (either canned, or the water you boil the chicken in)
1 Small Block of Velveeta cheese (16oz)
Salt and Pepper to taste
I cooked my chicken the night before so it made preparing this recipe on a Sunday afternoon very quick and easy! I had some boneless chicken tenders in the freezer I boiled, cooled, then covered and stuck in the fridge for the next day.
Add the soups and chicken first and then allow to heat though and through on medium heat. Stir occasionally to prevent scorching. Lower the heat, add the veggies and the block of cheese. When the cheese melts, it's done! Add water or milk to thin if needed, and salt and pepper to taste.
So there yo have it, an EASY creamy chicken vegetable soup! And mmmmm good I promise!
This recipe is easily doubled and cooks well in a crock pot. Add cooked rice or noodles for variety.
The recipe I prepared fed 4 easily, with enough left over the next day for my daughter to take a bowl in her lunch, send a bowl home with my mother in law, and eat the next day myself!
Don't ask about the calories, sodium, fat, etc...content in each serving, 'cause I have no idea, but I do choose NO SODIUM added, in any canned products I purchase!
